Pumpkin Mug Cake with Cream Cheese Drizzle
Serves 2
Ingredients
  1. 3T almond flour
  2. 1T flax seed meal
  3. 1/4 t baking soda
  4. 1 packet stevia
  5. 1 t pumpkin pie spice
  6. 1 large egg
  7. 1/4 t vanilla
  8. 1T pumpkin purée
  9. 1T butter, melted
  10. 1T unsweetened almond milk
Instructions
  1. Mix dry ingredients in a bowl. Add wet and combine.
  2. Spray 2 microwave safe ramekins, divide batter evenly amongst them, and cook in microwave for 1 minute.
  3. Frosting: beat together 1T cream cheese mixed with stevia to taste, splash vanilla, and 1T unsweetened almond milk. Drizzle over warm cake.
