Keto Cheesecake with Ground Walnut Crust
  1. 5 oz raw walnuts
  2. 2 packets stevia
  3. 2T butter, melted
  4. 1/2 t vanilla
  5. 8 ounces full fat cream cheese
  6. 2 packets stevia
  7. 2T heavy cream
  8. 1/2 t vanilla
  1. Preheat oven to 350 degrees.
  2. In food processor, pulse walnuts until they are finely ground.
  3. Add the melted butter, stevia and vanilla and process until a dough begins to form.
  4. Press the dough evenly into the pans and up the sides a bit. (We used three 3-3/4 inch diameter mini springform cake pans. Make sure to grease your pans completely.)
  5. Place on baking sheet and bake for 10 minutes.
  6. Remove from oven and allow to cool while you make the filling (next steps).
  7. Reduce temperature of oven to 300 degrees.
  8. Process the cream cheese until smooth (you can use the same food processor bowl).
  9. Add rest of the ingredients and process until incorporated, stopping to scrape down the sides when necessary.
  10. Spoon evenly onto the crusts.
  11. Bake for about 35 minutes until no longer jiggly in center. Allow to cool. Run a knife along the sides to loosen the cakes.
  12. Remove from the pans and refrigerate for a few hours.
  1. You can drizzle tops with warmed peanut butter, chopped nuts, low carb chocolate sauce or whipped cream.
